These gluten free mini muffins are super-healthy and super-delicious.
INGREDIENTS 1 can black beans (rinsed and drained) 2 eggs ½ c cacao powder ½ c almond meal ¼ c plain yogurt ¼ c olive oil ⅛ c pure maple syrup or honey (¼ c if you like it sweeter) 1 tsp baking powder 2 tsp vanilla extract 1 c frozen berries ½ c bittersweet chocolate chips
METHOD 1. Preheat oven to 175C. 2. Prepare muffin tins. 3. Place all ingredients, (except chocolate chips and berries) in a blender. Blend until smooth. 4. Pour the mixture into the prepared muffin tin, filling each muffin cup almost to the top. 5. Press 4-5 chocolate chips and 1-2 berries into each muffin. 6. Bake for 12-15 minutes. 7. Cool in the pan and then remove to a wire rack.
